Flashback to Six Months Ago


I was enjoying biscuits and fresh Fig preserves. My Mom and Dad flew out to visit and they had 2 gallons of fresh figs tucked into their suitcase..a bit squished but still tasty and ready to be canned. Sugar and Figs, basically equal amounts cooked until it begins to thicken. Pour in to freshly sterilized jars. Can't beat it!




The Nasturtiums were blooming like crazy!



I still have preserves to eat. I think I'll have biscuits in the morning and dream of summer sunshine!

Pork Chops and Applesauce....Well..Kinda

Did I mention I was on Weight Watchers? Now don't be scared. I still eat good...really!!! I have pizza every week and chocolate nearly every day. I am not into self deprivation. I also use it as an excuse to buy new cookbooks and try new recipes that I might not get the hubby to try otherwise. Like these porkchops with an onion and apple sauce on top. Oven baked sweet potato fries and some roasted veggies round the meal out. Check out my new plates too! I am on a toile kick. This was a TJ Maxx find.



Pork Chops with Apple Onion Topping
Adapted from recipe in a Weight Watchers cookbook called Grill It!

2 pork chops seasoned with garlic salt & Tony Chachere's Creole Seasoning
2 tsps olive oil
1 onion sliced into rings
1/2 cup sliced mushrooms
1/2 cup apple juice
1 apple, peeled, cored and cut into thin slices

Heat oil in skillet. Saute pork chops on one side of a large skillet until brown and cooked through. In the meantime, on the other side of the skillet saute onions & mushrooms until onions are limp and just beginning to brown. Add apple juice and cook for approximately 3 minutes. Add apples and continue to saute until apples are soft but not mushy (about 5 minutes). Place porkchops on plate and serve with apples and onions on top.

Taking the Plunge!

I'm a bit of a perfectionist when it comes to achieving personal goals. This sometimes means I procrastinate even attempting something unless I know I can succeed. Sooooooo I have put off starting this blog since I know my time is limited and I might not be able to devote enough time to make it worthwhile. Well, I decided I was living a little too safely so I will take this first step even though there is serious risk that I will do my first post then the blog will just sit here and go stale. I suppose there are worse things that could happen!!!

So what will I blog about? What I know best of course...FOOD! With a sprinkling of gardening thrown in. Here is a photo from this summer that combines my two loves and reminds me that there is life after winter.
