Mosaic Monday ~Garden Show and a Spring Salad

For my mosaic this week I'm sharing a few images from the garden show I went to last weekend up in Seattle. It was really fun this year since the theme was "Once Upon a Time". I'll be showing some more pics soon, so this is just a preview.

All that forced spring has been making me crave spring time food like salads. This weekend I threw together a tasty one with some things I had one hand. Baby spinach, mushrooms, red onions, bacon and sliced strawberries.

I wanted something light for the dressing and had just the thing to use as the base.


These blood oranges are so red they are almost black. The juice was beautiful red though.


I also recently bought this garlic flavored vinegar and thought it would go well with the other ingredients.


For the Dressing:

Juice from 1/2 lemon
Juice from 1 blood orange
2 Tablespoons olive oil
1 Tablepoon Roasted Garlic rice vinegar
Salt to taste
Pepper to taste

Whisk all together! Pour over your yummy salad. Eat!

Flower shows already?? We had about 8 inches of snow since yesterday and it's still falling!!

What a wonderful spring salad. I just love strawberries and spinach. Your dressing, however, is awesome. I cannot wait to try it. I'll have to look for garlic rice vinegar or make my own.

I'm so glad you joined in with weekend cooking --hope to see more from you in the future.

Ohhhhh, and I'm definitely going to check out the Great Cooking Magazine Challenge -- Lord knows I have a zillion clippings and stacks of magazines.

Very beautiful photos from the show, so creative and inspiring. Must have rubbed off on you as your salad looks fab! By the way, your choc chip scones look superb!

I can't wait to see more photos of the flower show! We are still cold and snow-covered here :( I love strawberries and spinach together and what a great choice for a dressing!

Had to enlarge the mosaic so I could get a really good look! White tulips a fav..love the little spade in the one photo w/ the mini sprouts.

Spinach and strawberry salad is a "go-to" in summer..need to try your dressing..usually I just do a poppy seed.

Love the garden show mosaic! Looking forward to seeing more from the show! I didn't get to the Philadephia Show this year, but I have a link to it from a blogger friend. Delicious looking salad, and I need to get some strawberries.
