Flashback and Foodie Friday ~September Memories



I'm having trouble with my computer tonight, so I will make this weeks flashback pretty quick. I'm flashing back to last year - beginning of September. We were celebrating the beginning of college football by attending a game played by two of my favorite teams - LSU Tigers (my alma mater) and The University of Washington Huskies. I had to pull for my Tigers, but it was fun being at the stadium and I hope to go back one day to pull for the Huskies. The stadium is really neat...right on Lake Washington. They tailgate on boats!



Also in early September we had a visit from Randy's sister and her family. Here are Sherry and little Sierra at Mount Rainier Nat'l Park


We were enjoying the Lemon Queen perennial sunflowers


And Tomato Pie which is a great way to use those fresh from the garden tomatoes. We had lots last year. This year they are slowwww and mostly all I'm going to have are cherries and paste tomatoes.



Tomato Pie

1 pie crust, precooked for about 10 minutes
Tomatoes, sliced, enough to cover a couple of layers in a pie plate - I made this recently and used one monster tomato, but probably 2-3 regular large tomatoes will do the trick.
1 small onion sliced thin
Fresh Basil, chopped ( a good handful)
salt
pepper
1 cup mayo
1 cup parmesan grated finely
1 cup cheese of your choice (mozarella, cheddar, fontina, swiss would all work)


Layer tomatoes, basil, onions, more tomatoes, more basil, more onions. Sprinkle with salt and pepper to taste. Combine mayo, parmesan and the two cheeses. Spread this mixture over the tomatoes - covering well. Cook about 30 minutes at 350° or until begins to brown and crust looks ready. You will find variations of this all over the web. Make it your own!

How cool to tailgate on a boat!

I have to make that tomato pie, it looks fantastic! Hope you get your computer fixed! What a frustrating pain that is!
