Flashback and Foodie Friday ~Strawberries



Seems that all I've been up to doing the past few weeks are Flashbacks!! Lucky for me I have plenty of material. I am so thankful I got a monster external hard drive earlier this year. I can't emphasize enough the need to back up your precious pictures. I did lose a month of stuff in my hard drive crash, but most can be recreated from other sources so I'm back in business!

Stawberries are beginning to ripen here and I pulled my first a couple of nights ago. A little sugar and whipped cream and I was set (and in strawberry heaven).


I am waging war against slugs though who seem to love my strawberries as much as I do!


My flashback is to June of 2006 when I made some yummy jam. It has the freshest taste even in the middle of winter when the strawberries are a dim memory.



Strawberry Freezer Jam
This is the recipe from the Sure Jell box

4 cups prepared fruit (buy about 4 pt. fully ripe strawberries)
3 cups sugar, measured into separate bowl
1 box SURE.JELL For Less or No Sugar Needed Recipes Premium Fruit Pectin
1 cup water

Rinse clean plastic containers and lids with boiling water. Dry thoroughly.Crush strawberries thoroughly, one layer at a time. Measure exactly 4 cups crushed strawberries into large bowl. Mix sugar and pectin in large saucepan. Stir in water. Bring to boil on medium-high heat, stirring constantly. Boil and stir 1 minute. Remove from heat. Add strawberries; stir 1 minute or until well blended. Fill all containers immediately to within 1/2 inch of tops. Wipe off top edges of containers; immediately cover with lids. Let stand at room temperature 24 hours. Jam is now ready to use. Store in refrigerator up to 3 weeks or freeze extra containers up to 1 year. Thaw in refrigerator before using.

My strawberry plants have taken a beating by the energizer bunnies that have consumed much of my garden this year. I will have to go picking for this recipe. I have made this before and I can attest that it truly is delish! ~ Robyn

Suzy, that cup/saucer is just too cute. I'm in strawberry heaven here too. The season s much too short in my opinion! Always love your flowers and Mt. Rainier.

Suzy, how great that you have your own strawberry patch. I go down the street, and pick and pay :-) I have never seen such a perfect tea cup and saucer for strawberries. Perfect! I enjoy seeing your garden flowers and love the shots of Mt. Rainier.

Canning is one of my simple pleasures--it's soothing and edible. LOL Your flowers are gorgeous, too, and the view...a little bit of heaven.

Your strawberries look great! I can understand the slugs wanting a taste, but gross :) and Kathleen complains about dogs? LOL!

The jam and berries look amazing! I missed flashing back this week. Last day of work and I took a really long nap! Can I flashback a flashback? I'm back with ya next week, Suzy!
