I took a break last Friday, but Flashback and Foodie Friday is back! I have been pushing the season lately and so ready for spring, so I thought this would be nice dish to bring back. I made it using the first strawberries from my garden last June.
Minted Strawberry Fool
Adapted from: Whole Foods Market recipe site
Serves 6
1 pound strawberries
2 tablespoons granulated cane sugar, more to taste (I used 1/4 cup because my strawberries weren't that sweet)
2 tablespoons fresh spearmint leaves, more for garnish
1 cup heavy cream
1 (6-ounce) container low fat plain yogurt (I used Greek yogurt because I love it so much)
Core and trim the strawberries. Slice three berries in half and set them aside for garnish. Purée the remaining strawberries with sugar and mint leaves in a food processor. (Make sure you get the mint really minced good unless you don't mind large pieces). Transfer to a large bowl. In a mixer or with a wire whisk, whip the cream to stiff peaks. Gently fold yogurt into cream.
Taste berries and add more sugar if desired. Fold cream-yogurt mixture gently into berries until completely blended. Spoon the mixture into 6 dessert glasses and garnish with strawberries and mint leaves.

A while back, I mentioned our little weekend project of building stairs for Jigsy to get up in our new bed. Well actually it was more like 4 weekends! Randy cut out and assembled all of the wood, attached casters and did the carpet on the steps. I did the sanding and staining. So it was really a group effort. But it was worth the work and turned out great. Jigs looks proud of them doesn't he?
Of course you can't escape without some flashback flower photos. This is what was blooming in my yard when I made my Minty Strawberry fool in June of last year.

A wonderful double post. I think the strawberry fool sounds like a great dessert but I just can't stop looking at your beautiful flowers. A great flashback for a "sick of winter" reader!

Oh, you are making me wonder how my clematis did this winter! Kathleen and I ordered from the same company and were very pleased. I just hope mine survived our frigid temperatures.
I love Greek yogurt, and the strawberry fool looks so refreshing! I always have plenty of mint in my garden, so this will go on my summer list.
