Waldorf Salad Style Penne Pasta~ The Great Cooking Magazine Challenge Installment #3
I gave myself a challenge a while back to try a recipe from any cooking magazine that comes into my possession within a week. Several of my online buddies have taken up the challenge themselves! I got my new Everyday with Rachael Ray this week and knew I was going to be eating out a lot this since we have company. So I quickly picked a recipe that sounded good (there were quite a few to choose from!) and whipped it up before the company arrived on Saturday. I love the flavors of Waldorf Salad so knew this would be a winner in my book.
Waldorf Salad Style Penne Pasta
inspired by the June/July 2009 Everyday with Rachael Ray

1 pound whole wheat (I used a multigrain one) penne Pasta
3/4 cup mayonnaise (I used light)
1/4 cup sour cream (I used light)
3 Tablespoons fresh lemon juice
1 1/2 teaspoons ground cumin (love this addition!)
1/4 cup water (I skipped this)
3 ribs celery, chopped
8 slices bacon, cooked and crumbled ( I used the Real Bacon in the little bag..an acceptable substitute for me)
2 lg apples ( the recipe called for 4 nectarines or pears)
1 bunch chives, chopped
3/4 cup coarsely chopped roasted pecans (I sauted them in the skillet with a little bit of butter and salt, then sprinkled with a small amount of sugar)
Cook pasta al dente, drain. Meanwhile whisk together mayo, sour cream, lemon juice, cumin and 1/4 cup water. Add the pasta and toss to coat. Let sit for 10 mins while you chop the rest of the ingredients. Stir in celery, bacon, chopped apples, half the chives and half the pecans. To serve top the pasta with the remaining chives, pecans and few couple slices of apple.
The past couple of days have been so warm and sunny! Today...another story so far! But here's what it looked like Saturday.

Suzy, all your flower / yard pics are wonderful, but I'm very partial to lilacs. What a wonderful picture!

Waldorf salad with pasta is a new one for me! Looks really yummy too..gearing up with recipes for the hot summer days hopefully ahead!
Your garden photos are beau - you have such an array of flowers, plants etc..love the lilac. I always enjoyed my neighbors..until he cut it down..:(

I too love seeing your garden photos...everything looks so lush and green (and freshly mowed)! Your little herb pot is just so cute...do you have it near the kitchen door too? My lilacs are a week or two away but the scent is one of my all time favorites...I can almost smell yours - a great photo!
I like Waldorf salad, never had it with pasta though...Good one to try this summer.
Nothing wrong with the bacon in the bag, Suzy. It is real BACON, not like bacos or bacon bits which are imitation...I have been using it for years...get it at Costco or SAMS...

A waldorf pasta salad sounds great!
I'm making this for dinner tonight. I think I'll try to shoot it, but I don't think it will be as pretty as your picture!
I found this through google and made it last night. Very interesting and good, I plan to make it again! I added some grapes in and plan to increase the fruit to pasta ratio next time, but that's just personal preference. Thanks!
