Flashback and Foodie Friday ~ Happy Cinco de Mayo Week



It's been a long, busy week. Food has been, for the most part, quickly put together with a few leftovers thrown in. I guess that's what my Flashback Friday feature is really...good ole leftovers! (By the way..if you want to join in I have Mr. Linky up this week) I was trying hard to fit into the Cinco de Mayo theme of this weeks Foodie Friday hosted by Designs by Gollum.


I love Mexican food, but I couldn't seem to find many pics in my archives of Mexican food that I've actually prepared. My Taco Salad is about as close as I could get from back in February 2008.



Taco Salad
There really isn't a recipe. You put in what you like. Mine usually has:

Tortilla chips, crushed
Lettuce
corn
ground beef
cheese
olives (which I leave off of Randy's)
jalapenos
sour cream
Salsa

Some other things that would be great on this are black beans, avocados or fresh tomatoes. The sour cream and salsa make the "dressing". This all gets jumbled together but it's not nearly as nice a picture as when it's kind of layered on.

I took very few garden shots in February 2008 and who wants to go back to February weather right now anyways? So how about a few shots from August of 2007. We can all pretend there's a warm summer breeze blowing and maybe that we are sipping on a Margarita!

Love taco salad - make it often in the summr - I like the addition of fresh corn!
Pretty flower photos..you have such a green thumb.

I also really love the corn in this recipe!! I am excited because I have a big platter I just bought that I think would be cool to serve this in!! I really really really (REALLY) love all your photos.

I'll be right over for margaritas and taco salad...It's only 9 am and they both look good to me ;)

I love the flashbacks of your garden. Is that second flower some kind of agastashe? It is so unique looking and I love it. All your photos, food and flowers, are fantastic!

This looks so good. I made taco salad in the edible bowls a couple of weeks ago. Love it. J has requested one of the big taco salads I used to make. I'm definitely adding corn to the recipe, this time.

I always enjoy both the KITCHEN and BOUQUET parts of your posts, and today is no exception.

The taco salad definitely looks tasty, but right now the margarita is calling my name. I love a good (not too strong) frozen margarita with salt on the rim.

Your Taco Salad is making me soooo hungry! The "themes" for FF are totally optional....and flowers are specially welcome! They stimulate the appetite and make the heart glad. Your garden looks like a piece of heaven on earth! What are the flowers in the second picture?
